| Birch & Waite Honey Mustard Dressing & Sauce | 1/2 bottle |
| Gnocchi | 500g |
| Baby spinach leaves | Handful |
| Mushrooms, chopped | 200g |
| Spring onion, sliced | 3 |
| Olive oil | 6 tbsp |
| Salt & black pepper | To taste |
| Parsley (Optional) | To serve |
Method
- Preheat oven to 220°C
- On a lined baking tray, place the gnocchi, mushrooms, spring onions, salt and pepper and 5 tbsp olive oil. Mix together.
- Place in the oven for 25 minutes.
- Remove from the oven and add the spinach leaves and 1 tbsp of olive oil. Mix together and put back into the oven for another 5 minutes.
- Remove from oven and drizzle Honey Mustard Dressing over the top.
- Stir gently to combine.
- Serve and enjoy!
